If you do a google search with "protocols and handshaking ipt" you'll find a couple of resources that will explain it. The websites explain it in a simplistic way- there also used to be a good video as well to explain this but the name eludes me at the moment (if I think of it I'll put the link up).
I would say EFTPOS and electronic banking as these systems are dependant on communication technology. Also, email, voice mail and Voice over Internet Protocol (VOIP) are examples.
