A network with a router is always going to be better than an ad-hoc network... but your choice. I pointed you to the N dongle, it's $130. Edit: so you're going to need one dongle for the server, one for the computer. 2x$130 ;)

If you have a 802.11G router then you should match it with the same brand 802.11G USB dongle - because some of the brands support "Afterburner" and "XPress" and "AirPlusG" which are hacks to get more speed/range out of G.

Everything should be there...except for the 7.1 surround... laptops don't usually come with those. You'd be looking at http://www.soundblaster.com/products/product.asp?category=1&subcategory=204&product=9103 an external soundcard that plugs into USB, and they aren't cheap.
